Golden, flaky puff pastry wrapped around a deliciously savoury beef and sausage filling, with a hint of sweetness from pomegranate molasses and a touch of fennel for extra flavour. Brushed with egg and finished with poppy seeds, these easy pastry rolls bake until beautifully golden and crisp.

Perfect for a family meal, lunchbox, party platter or an easy snack. Serve warm with tomato sauce or your favourite dip for dipping.

What you'll need

Ingredients

  • 650g beef mince
  • 550g sausage mince
  • 10-12 puff pastry sheets
  • 2 onions finely diced
  • 2 tsp salt
  • Generous amount of black pepper
  • 2 tbsp pomegranate molasses
  • 2 eggs
  • 2 tsp dried fennel
  • 1 tbsp tomato paste ( or you can use tomato sauce)
  • To top 1 egg beaten ( to brush your pastry)
  • Poppy seeds

Step-by-Step Instructions:

    Prepare the pastry: Preheat your oven to 180°C. Remove the puff pastry sheets from the freezer, peel back the plastic wrap and separate the sheets. Allow them to thaw while you prepare the filling.

    Prepare the filling: Finely dice the onions. In a large bowl, combine the beef mince, sausage mince, onions, salt, black pepper, dried fennel, pomegranate molasses, eggs and tomato paste.

    Mix well: Using your hands, gently massage the mixture together until everything is well combined and the filling becomes a smooth, paste-like consistency.

    Fill the pastry: Place one pastry sheet flat and add approximately 3 large tablespoons of filling along the bottom edge.

    Roll: Gently roll the pastry upwards, keeping the filling tucked in and securing the edges as you go

    Cut into pieces: Using a sharp knife, cut the roll into approximately 5cm pieces.

    Repeat: Continue filling, rolling and cutting the pastry sheets until all the filling has been used.

    Brush and finish: Beat the remaining egg and generously brush each pastry piece. Sprinkle with poppy seeds.

    Bake: Place the rolls on a lined baking tray and bake on the middle rack for approximately 35 minutes, or until golden brown and cooked through.

    Rest and serve: Allow the rolls to rest on the tray for 5 minutes before serving. Enjoy warm with tomato sauce or your favourite dip.

Cooking Tips:

  • Keep your pastry cold: Work with one pastry sheet at a time and keep the remaining sheets chilled so they are easier to handle and roll
  • Don’t overfill: Use around 3 large tablespoons of filling per sheet. Too much filling can make the rolls difficult to seal and may cause them to split while baking.
  • Mix the filling well: Massage the mixture until it becomes slightly sticky and paste-like. This helps the filling hold together inside the pastry.
  • Give them space: Leave a little room between each roll on the baking tray so the pastry can crisp up nicely.
  • For extra golden pastry: Brush the beaten egg generously over the pastry, making sure to cover the edges.
  • Check the centre: If you're unsure whether they're cooked, cut one open to make sure the meat filling is fully cooked through.
